
Sassy Seasonings
with Almonds
Fish & Chicken - Put in tin foil; squeeze a fresh lemon, sprinkle olive oil and sprinkle with the "Sassy," close up foil, bake or barbecue.
Rice (any kind) - Add 2 Tbls. of the "Sassy" to 2 c. water, squeeze ½ fresh lemon, 1 Tbls. olive oil, bring to a boil, add 1 c. rice, cover and cook for 20 minutes.
Veggies - Steam veggies, drain, add fresh lemon juice, olive oil or balsamic vinegar, sprinkle with the "Sassy" & add a sprinkle of seasoned bread crumbs and parmesan cheese, cover and let sit for a few minutes.
Dips - Mix 2 Tbls. of the "Sassy" to 8 oz. sour cream or plain yogurt and refrigerate for a couple of hours. For a great veggie dip, mix 4 Tbls. "Sassy" to 1-8 oz. container of sour cream and 1-8 oz. container of cottage cheese, add some hot sauce, a little squeeze of fresh lemon (by now you know I love fresh lemons!) and top with some fresh dill.
Pasta - Cook the pasta of your choice, drain (reserve about ½ c. of the water). Toss pasta, reserved water, olive oil, sprinkle the "Sassy," fresh grated parmesan or romano cheese and fresh pepper. Add a salad and you have a meal; don't forget to sprinkle "Sassy" on the salad!
Other Great Uses - Sprinkle on any meat before baking, frying or barbecuing. Sprinkle on eggs, mix with melted butter and or milk when preparing sauces.
Cajun Seasoning - The best ever "Blackening" seasoning on fish! Use as a rub on fish, chicken, pork or beef. Sprinkle on French Fries before or while cooking. Add a Tbls. or 2 to soups and stews or add 2 Tbls. to your favorite cornbread mix!
Rainbow Bean, Wild Rice & Barley and Pasta Fagioli Soups
All my soups are nutritious, delicious and easy to prepare. All you need extra is a can of crushed tomatoes for the Rainbow Bean and Pasta Fagioli and your own soup stock or canned broth (low or no sodium) for the Wild Rice and Barley. The Rainbow Bean works wonderful in the crock pot and the Wild Rice and Barley takes one hour from start to finish. Add a salad and either French bread or some Cajun Cornbread and you have a meal fit for any of your family or friends.
Apricot Jalapeno Jam (mild or caliente) - Use as a Hors D'Oeuvres by just spooning over cream cheese to serve with crackers. My family's favorite is: Take boneless chicken breasts, sprinkle with olive oil and the "Sassy," cover with tin foil for about 20 minutes or until center is no longer pink. Uncover, spread Apricot Jalapeno Jam on each breast and add a slice of jack or pepper jack cheese. Bake an additional 10 minutes or until jam is caramelized and cheese is melted. Also great spread on any fish (especially lobster) just before end of cooking!
